MILAN – Let’s start with the sentence used by Carlos Pendas, founder of Meticolous: “My whole focus now is creating an espresso machine from the future.” And progress, however, looks to the past: lever machines are a very strong appeal for Italian consumers and baristas, who find in this tool the tradition of the classic bar of yesteryear.
Of course, from a technical point of view, there are several challenges, especially for operators who are now used to being able to count on the support of automation even behind the counter.
How then to do it? It’s up to the Meticolous team of designers, engineers, and enthusiasts, who worked together to create the perfect lever espresso machine, because it has in addition a smart and digital part that places it in the modern era of the coffee shop. Or even future.
Meticolous Espresso designs the first robotic lever machine
Thanks to a powerful digital motor, by combining 10 high-precision sensors-which monitor temperature, pressure, flow rate, and even the weight of the liquid in the cup through the Acaia Powered scale-with advanced control algorithms, the result is the ability to totally manage the extraction process.
Given this, Meticolous Espresso can give constant attention to every variable and adapt to any change, reacting on the spot just as an experienced barista might.
What is the Acaia Powered scale?
With the partnership of the company that develops technical innovations for the Acaia coffee industry, Meticolous is able to know through flow sensors exactly how much water is flowing through the coffee to the cup, being able to adjust the flow rate, and stopping the extraction depending on the set ratio.
And again speaking of water: Meticulous heats only the exact amount needed to brew the espresso, making it much more energy efficient.
In short, all that is needed is hot or room-temperature water in the chamber and Meticolous proceeds on its own. To get a good espresso, the machine also has an intuitive interface with a list of more classic profiles or even different recipes recommended by experts from around the world. You will only need to press the button after selecting your preference in order to drink your coffee.
Let’s talk about pressure
Instead of boiling water to generate mechanical power, the 2,000 Newton digital motor pushes the liquid directly onto the coffee puck, making more than 150 pressure adjustments per second. Whether maintaining constant pressure at 9 bars or replicating more refined pressure profiles, Meticulous offers a significant level of control.
To learn more about this product, you can pre-order and support the company on the open campaign on Kickstarter. In just 28 hours since its launch, it has surpassed $2 million.
