ITALY – The world coffee business will be getting together at Host 2013

MILAN – In the coffee shop, we find the whole world in a single bean: from growers to roasters to distributors, from coffee machine manufacturers to master baristas.

A world whose benchmark appointment is Host 2013, the international exhibition of the hospitality industry, world leader in Ho.Re.Ca. and Retail, being held atfieramilano from Friday 18th to Tuesday 22nd October.

At Host 2013 coffee is the star in the Coffee-Tea sector, part of a single macro-area in conjunction with Bar & Coffee Machines and with Gelato-Pastry.

According to a study by Global Industry Analysts, by 2015 the world market for hot beverages (coffee and tea) will reach a volume of 10.57 million tonnes and be worth 69.77 billion dollars.

Of this, coffee remains the key player. Data released by the International Coffee Organization (ICO) show that in 2011 sono stati prodotti in tutto il mondo 130 million, 970 thousand sacks of green coffee (translating to 7 million, 858 thousand tonnes) for an estimated 36.4 billion dollars on the global market.

A constantly evolving market, with companies that target in on their own clientele more effectively rising to the challenge. Businesses that focus on quality, training, knowledge of the product and specialisation along with protecting workers emerge the winners: one example of this is the Coffee Kids project to help disadvantaged minors in coffee-growing communities.

And it’s lifestyle time for coffee too: in terms of the tendency of companies to supply bars with a wide variety of blends and flavours to meet with the favour of large slices of consumers, as well as the niche of connoisseurs, and equipment that helps master baristas develop their creativity.

On the roasting front, Lavazza – one of the companies that experience the world of coffee across the board – proposes both traditional blends of grains and filter coffee in addition to the Blue programme for outside the home, which includes a range of coffee machines in collaboration with Wega and single or two-dose professional capsules for a cup yield that is always excellent. The espresso specialties of Espressounique and accessories for design bars are also highly interesting.

A 360-degree viewpoint for Malongo from France too, one of the major industry groups from across the Alps, which guarantees quality from plant to cup, while keeping a keen eye on economic and social sustainability: prestigious blends from fair trade become aromatic coffees – espresso and filter.

To expand the culture of coffee, Caffè Corsini seeks, tastes, evaluates and selects the single coffee beans from a variety of origins. With the Compagnia dell’Arabicaproject, places and products – from Kenya to Brazil to Costa Rica – contribute to bringing the finest world production to the cup.

For more than a century Costadoro has been roasting coffee and it is distinguished by the particular aesthetic care it puts into its bar line with Coffee Lab and Master Club, rich harmonious and spiced blends that come with a full range of design accessories.

Ever since the Habsburg era, Trieste can boast of a long tradition of coffee. Here, for more than 15 years, Sandalj Trading Company prepares the green Sandalj Blend, suitable for a variety of preparations, and last year it launched the new source traceable line called the Sandalj Traceability Project, which joins the Cup of Excellence and Sandalj Excellence coffees; still in the Trieste, for more than 50 years, Imperator has imported the finest quality coffee from all over the world, focusing on purity and flavour, while the core business of Demus is removing the caffeine from green coffee, both raw and using processes to obtain special decaffeinated blends.

From a key player in a real phenomenon of coffee habits, Nestlé Italia now introduces VIAGGI to the demanding public of the trade:this innovative multi-beverage programme offers a wide variety to the barista and to consumers – up to 40 different recipes – combined with extremely simple operations.

In the world of coffee machines, the Cimbali group adds the importance of the coffee culture to the technological focus with Mumac, the Coffee Machine Museum, boasting more than 200 models by different brands.

The ideal addition to the production of a company leader that has made history with technological advances in the industry with traditional and automatic machines and dosing equipment.

Successful mix of Made in Italy and multinational background for Gaggia and Saeco, the two brands of the Philips Group operating in the sector of professional machines.

While Gaggia is equated throughout the world with the traditional espresso, and is now pursuing a range of high performance, super-automatic machines, Saeco is the name that in the ’80s first took the espresso of master baristas out to the general public.

And it continues this commitment with machines that have a high electronic content, which also help less expert baristas make a fine espresso.

From traditional to super-automatic, the distinguishing trait of the Nuova Simonelli machines is also technology: the T3 three-dimensional temperature control, for example, guarantees even better performance because it manages each group singly.

Hi-tech profile for Rancilio too, with Xcelsius: patented temperature control software by Rancilio LAB, installed on the Classe 9 machines, which enables the coffee to be extracted, and change the temperature of the water during the process, using a dynamic “profiling” procedure.

For more than 40 years, CMA Macchine per Caffè, owner of the historic Astoria brand, works with tradition, enhancing it with technological innovation from the user’s point of view, characterised by the motto “Think Barista”.

The secret of the semi-automatic espresso machines of Dalla Corte is Multi-Boiler-Technology: brewing units and boiler are completely independent, enabling precise, direct control of brewing temperature, in conjunction with the direct temperature control system (DTCS).

For its part, La Spaziale has a training center, where most roasters and traders send their skilled workers for training in the courses it organises; in this case too, the courses are supplemented with the technological content of the machines, designed to make operations easier for the master baristas.

Another historical name in coffee machines, Sanremo focuses on fine materials, like the crystal in the Roma model or the enamelled retro line for its Verona model, which encompass a wide variety of electronic-based functions.

Electronics lead the way in the Wega Macchine per Caffè machines too, with a wide range of semi-automatic and manual machines supplemented by a line of grinder/dispensers made from hard-wearing, light materials such as aluminium and special plastics.

From Germany, WMF AG is attending with its products in all the main segments of cooking, dedicating a range of professional machines to coffee – with or without capsules – along with accessories such as creamers, whisks, cutlery and mocha boilers designed to make the experience of fine coffee more personal.

Combined capsule and blend system for Caffitaly System, whose quality is guaranteed by putting together the finest coffee crus, machines based on patented components and an innovative, double filter capsule that guarantees smooth passage of water at high pressure.

Looking at coffee from the viewpoint of industrial production, Petroncini Impianti has been coming up with technological solutions for processing green and roasted coffee since 1919, including roasting and grinding, recently adding IT management systems.

The vending sector is also focusing on the concept of quality coffee. Rheavendors Group, whose offer ranges from the Ocs/Ho.Re.Ca. lines – from micro to large sizes – to the table top, free standing and combo models, which all share the “art of vending machine retail” approach.

The overview of the Coffee-Tea area of Host 2013 is completed with a full calendar of events. There is plenty of room for the seminars organised by the Specialty Coffee Association of Europe (SCAE) in two rooms – the Green & Sensory Room and the Barista Room.

The former will host courses in Sensory and Cup Tasting and their application in the business; the latter will be home to workshops on basic, intermediate and advanced barista skills.

Business style for P.E./24h La Cas@ fuori-Casa, cycle of focus groups, seminars, educational activities organised by Federazione Italiana Pubblici Esercizi (FIPE – Italian Federation for Public Trade) set up as a guided tour along a standard, 24-hour day – from breakfast to the lunch break, to afternoon break and happy hour right through to  night life.

For the world of tea, Host and ADeMaThè – Associazione Italiana Degustatori e Maestri di Thè (Italian association of tea tasters and masters) will be organising tea tasting and workshops, focusing strongly on the new professions: Tea Testers, Tea Traders, Tea Ceremony Masters.

A real Villaggio del Caffè, the coffee village set up by ALTOGA – will provide training sessions and information by experts in the coffee supply chain, along with a taste counter including live performances where it will also be possible to admire the biggest cappuccino in the world, which will be going for the Guinness World Record.

Hostis held in Milan, city of Expo 2015 dedicated to the theme of food, and one of the European economy’s key crossroads: being present at Host means having a master key to unlock the doors to numerous, high income markets.

A role that is seen in the numbers: a real boom of new entry companies in 2013, with over 260 already now. A total of over 1,600 exhibitors are expected from 50 countries, in 12 pavilions.

In particular, exhibitors from the USA have doubled, from France they are up

by 30%, from Germany by 21%, from the Netherlands by 20% and from Switzerland by 15%. Excellent performance by emerging economies too.
