LYON, France – Celsius Roasters was born in 2022 in Lyon from the meeting of two passions shared by Nicolas and Lucas: wine and coffee. The spark came from comparing these two worlds, because in France the culture of wine is highly developed, while coffee, although omnipresent, is relegated to a secondary role.
“For a wine and coffee enthusiast, it’s confusing: on one hand, a detailed wine list; on the other, only the word ‘espresso’ for coffee, with no indication of origin and even less about the producer or roaster,” they explain. Therefore, they decided to take matter into their own hands and restore coffee to its rightful status, while contributing to a more responsible supply chain.
The goal? To reveal the incredible diversity of coffee and guide consumers through a journey of discovery and informed tasting, with particular attention to exceptional coffees.
“For us, roasting is like winemaking: we start with high-quality raw materials and elevate them while respecting their terroir. Our philosophy is less but better,” the founders say. Every day, the team increasingly focuses on exceptional coffees, with a strong commitment to precision, from selection to roasting.
The coffee selection follows a rigorous protocol: only specialty coffees, chosen blindly during cupping sessions. This strict approach allows them to offer a varied range, from accessible Brazilian coffees for espresso professionals to rare Colombian varieties that coffee geeks are looking for. This diversity enables them to reach a broad audience while maintaining a high level of quality.
To achieve this level of precision, Celsius Roasters chose an IMF RM15 roaster, attracted by its compact size, productivity, and, above all, consistency. “From the very first roasts, we achieved exceptional aromatic clarity. Precise control of parameters, absence of scorching, and smoke management thanks to the integrated burner are real assets for our work in the city center” they explain.
Today, Celsius Roasters continues its journey toward ever higher quality and diversity, with the ambition of becoming a European reference in specialty coffee.
