It’s called PBtech and it’s an on/off system that, during extraction, is able to reduce peaks of acidity and bitterness, enhancing the sweetness of the coffee and always guaranteeing consistency and repeatability. To fully understand it, you have to try it. “With PB Tech I can get a softer and rounder espresso thanks to the specific extraction style,” explains Mikael Jasin, 2024 World Barista Champion. “I activate the PBtech function for most of our coffees at Omakafé. Usually, with PBtech I manage to extract in less time thanks to the agitation of the water inside the portafilter.”

In fact, PBtech extracts the solids offering a full and rich body while dissolving the aromatic compounds of each coffee. It also balances acidity and avoids bitterness in your cup.

Simple, automatic, consistent

PBtech is extremely easy to use thanks to its on/off extraction technology: during recipe creation, simply decide whether to activate it or not to work all day without a worry. Just start the extraction and then take care of other higher value-added activities such as customer relations, milk frothing or more. In fact, PBtech does not require variables to be taken into consideration and the presence of the barista in front of the machine during the entire extraction phase but guarantees a fast and waste-free workflow and above all a consistently excellent result.

But it’s the experience in the cup that is surprising: PBtech has achieved excellent results with both mainstream and specialty coffees. In relation to the roasting profile, it offers a full and round body, balance and sweetness in the cup.

Victoria Arduino: PBtech Features

PBtech is a patented Victoria Arduino technology and is an ON/OFF function available on the Black Eagle Maverick and E1 Prima PRO professional coffee machines. It can be customized for each group, for each recipe.

You can easily recognise when the PBtech function is active thanks to the distinctive sound coming from the PB-Tech valve. This valve alternates cycles of opening and closing the water, allowing the pressure to reach the coffee puck only at particular phases of the extraction. When the valve is closed, the water remains in contact with the coffee puck and, as soon as the valve reopens, the machine’s pressure pushes that water out, creating more space for the new water coming from the valve. In this way, the coffee puck has more space to expand and the water is able to reach more coffee without pressure, obtaining a harmonious extraction capable of bringing the best balance of aromas and flavours and consistency to your cup of espresso.
