BELFORTE DEL CHIENTI, Italy – The Coffee Knowledge Hub and Cup of Excellence are bringing the Cup of Excellence Sensory Education Training course to Italy. Sensory evaluation of coffee is at the heart of many businesses in the coffee supply chain from farming through to the roaster and into the café.
The Cup of Excellence program finds the best coffees produced in partner countries each year. Established in Brazil in 1999, it has been promoting transparency, quality, and fair prices for producers since its inception. Farmers submit their coffees to a national jury who evaluate them to find the best lots.
These are then evaluated again by an international jury who choose the top 20 coffees.
The intensive program is now recognized as the best evaluation protocol for high quality coffee.
To join the international jury, an exhaustive training program has been developed
In this sensory training and calibration course, the students are taught the skills to assess coffees across a range of qualities and be consistent in cupping the same coffee over multiple days. The outcome is improved sensory skills and becoming more accurate and consistent.
Cup of Excellence has been delivering a training course over the last 4 years.
The cupping protocols and sensory evaluation taught are the same used by the international jurors in the Cup of Excellence program.
It is delivered by Alex Pond, the education manager for Cup of Excellence, and an experienced jury member.
