Catching up with Axil Coffee Roasters ahead of Mice2019 return

MELBOURNE, Australia — The team at Axil Coffee have enjoyed quite a bit of success lately, with two of their Baristas recently placing in the top three at the Asca Southern Region Barista Championships earlier this month.

Ahead of their return to Mice next year, we caught up with Head Barista Anthony Douglas (runner up at the Southern Region Championship) to tell us more about their roastery and discuss all things coffee.

Q: How did Axil first start out?

A: Our roastery first started out with our directors, husband and wife team Dave and Zoe both working for separate coffee business at the time. Dave in sales and Zoe as a roaster. After gaining bounds of experience in their careers they decided it was time to take the leap into starting their own baby and Axil was born!

Q: If you could drink a cup of single origin from one place in the world, where would it be?

A: Lately I’ve been enjoying Colombians but if I had to choose one origin it would be Ethiopia.

Q: If you could have a cup of coffee with one famous person past or present, who would you choose?

A: For me it would have to be Timothy Ferriss. He’s a best selling American author/entrepreneur who’s famous for pushing the boundaries of human psychology and performance.
